I used to struggle with the fact that I have a large appetite, love to eat food and am pretty much always hungry BUT I also want to be fit and healthy. Oh the conundrum. I didn’t think you could have both. My mindset was more food = gain weight and less food = lose weight. So, I would act accordingly. Oy, what an exhausting way to live! But..ahhh, how the times have changed. Because of girls like Caroline Deisler, (who has a whopping 292K followers on social media and a successful blog where she shares her holistic wisdom, favorite vegan recipes and fitness routines) I became inspired to try out a vegan diet. Obviously she is gorgeous, her hair is thick and her skin is glowing BUT I was drawn to her positive relationship with food and how she eats literally all day and instead of food being a burden, it nourishes her body and gives her the energy she needs to work, study, travel and exercise. Understanding that you can eat in abundance if it’s the RIGHT kind of foods and food’s purpose was more than just weight gain or loss and it’s actually meant to feed your cells was life changing. (I honestly didn’t know that eating junk food was bad for your organs; I just thought it made you fat.) No more diets, ever! Making the lifestyle change about two years ago to become vegan and fill my bod with whole foods has been the greatest period of growth for me. And I really owe it to women like Caroline who are showing us that food is our friend and our bodies are not a burden!

Tell me a bit about yourself. Who are you and what do you do?
Hey I´m Caroline! I am a nutritionist and business student living in London. I started my healthy lifestyle blog Caroline´s Choice in May 2016 with the aim to inspire others to live a healthier life by showing them how delicious and easy a plant-based diet can be. Most girls have been on a diet at least once in their life and don’t find healthy eating easy, fun or delicious. I have always been a huge fan of eating an abundance of fresh whole foods and turned vegan 3,5 years ago.
What did you have for breakfast this morning?
I had a green smoothie with spinach, parsley, lemon, ginger, water & Mango. It´s my go to recipe for an easy morning pick me up. About an hour later I had two large bowls of fresh fruits. My current favorites are honey melon and mangoes.
How did you get interested in nutrition?
I have always been a fan of healthy eating and feel like I have always been a vegan in my heart. However, as I moved to New York for modeling at the age of 19, I experienced quite a lot of pressure of staying skinny. As a result, I often times ate very little for a few days but then had my cheat days where I would binge on all kinds of unhealthy foods. I was close to a mental breakdown and realized I couldn’t keep up with it anymore and I wasn´t happy at all.
My boyfriend encouraged me to stop modeling, so we moved to London and I started studying which was the best decision I have made. I was finally in that place where I could develop myself without having the pressure of being extremely skinny. That was the time when I turned vegan. I had only one rule which I still live by today: Focus on fresh whole foods & never restrict calories. Ironically, I eat much more now than I used to back then and am way more fit and more toned than I ever was. The plant based diet changed my life in so many ways! My skin cleared up, I sleep much better and I feel so balanced and at ease with myself. Seriously, I couldn’t recommend it more. 🙂
Who is your greatest health influence?
To be honest, I don’t have that one person who is my health guru. I think there are many inspiring people but I never started that journey because I wanted to become like someone I was following. I love the idea of developing your own character in a way that you do what works best for your body. In my case that is a plant based diet. However, a few people who have inspired me a long the way are Rawvana, Fullyrawkristina. Deliciously Ella, Markus Rothkranz, David Wolfe and Rüdiker Dahlke.
What motivates you to live a healthy lifestyle?
Changing my diet has brought me so many amazing results that I got more and more motivated seeing these changes. You become so at ease with yourself, in love with the world and are happy for no reason. I really became a different person. I am much more balanced, sleep better, have clearer skin and also attract different people into my life than I did before. Those are all reasons why I love to nourish my body with the best possible foods and want to motivate others to try it as well. There is nothing more satisfying than always eating as much healthy carbs like fruits, dates, potatoes etc. as you like and becoming fitter, happier and healthier at the same time.
What does a day on your plate look like?
I am that person who eats the same foods all the time and doesn’t get bored easily. My breakfast is always different fresh fruits and a large green smoothie with added spirulina or Chlorella. My lunch is most of the time more fruits or dates. I love to eat raw during the day as I find it gives you most energy without making you tired. Dinner usually starts with a large green salad with lots of rocket, spinach, lettuces, cherry tomatoes, cucumber and avocado. I always add steamed potatoes, sweet potatoes or roasted squash. This is my go to dinner 3-4 nights a week. On other days, I make things like Avocado Toasts, Curries and vegetable stews or Avocado Sushi.
What’s the one beauty product you can’t live without?
Coconut oil!!:-) I use it every day on my whole body as a body lotion before going to sleep. It is so pure and natural and so much better than any body cream.
What does your fitness routine look like?
I am a big cardio lover!! Running, spinning and boxing are my favourite workouts!! Running is so convenient as you can literally do it anywhere at any time. It clears my mind and brings me fresh and good ideas. Boxing is a great way to get more toned and fit while it´s actually super fun. I have never been too much into lifting weights but I´m definitely open to change up my routine from time to time. I usually workout between 4-5 times per week for an hour and I am quite active on a daily basis. I take the city bike to University and mostly walk everywhere.
Do you have a mantra that you live by?
Be kind and treat people the way you wish to be treated. Be real, honest and loyal! It´s so rare these days and I always appreciate when I meet authentic, caring and happy people. I also try to only surround myself with people who lift me up. There is nothing more draining than people who take out your energy.
Do you have cheat days/meals? If so, what is your indulgence?
Although I don´t call it cheat day, I LOVE avocado on toasted sourdough bread. It´s my Saturday routine whenever I´m home in London. There is a small farmers market close to where I live and I love to buy a few loafs of fresh bread and make lots of avocado toasts and tomato bruschetta for my fiancé and me. It´s not really a cheat meal but since I don’t eat bread every day I guess It counts a little.
How long have you been plant based and what made you decide to change your diet?
I have been eating a plant based diet for 3,5 years now. The key changing point was when I studied nutrition and learned how our body reacts to meat and dairy products on a physical level. I also read the book Peace food and The China Study which both convinced me to give it a try.
What do you think is the key to living a healthier life?
Focus on adding the good stuff and eating enough. 🙂 If you don’t eat enough on a high carb vegan lifestyle you won´t be satisfied. The key is to always eat as much as you want to make it sustainable. It´s not a diet, it’s a lifestyle which means you want to be able to do it forever and therefore it has to be satisfying.
What does your evening routine look like?
First thing I do when I come home is to take off my clothes, apply coconut oil on my whole body and put on sweatpants and a cozy sweater. I put on relaxing music and start making dinner. While I prepare my usual salad & steamed potatoes etc. I facetime my dad or mom. After that I sit down and take time to eat. I always take at least an hour to eat dinner. It´s the time of the day where I relax and I don’t like to eat in a rush. I also usually check on some emails or watch a Youtube video. My go to post dinner snack is a cup (or two) of delicious juicy medjool dates & a peppermint/ liquorice tea.
Do you have any self care rituals?
Yes! Working out regularly, eating mostly whole fresh foods, going to the steam room a few times per week and getting a massage once a week. 🙂 Massages are my favorite thing in the world!! I also love to do Cryotherapy and Colonics every now and then.
Do you have any tips for people just starting out on their health journey?
Start with small changes and don’t put too much pressure on yourself. You are doing this because you love your body and not because you want to punish it. Start by eating more fresh fruits, replace chocolate with dates, drink green tea instead of coffee, add lemon to your water and start your dinner with a green salad. Easy steps that will slowly turn into habits.
What do you know now that you wish you knew five years ago?
Don’t worry too much. It´s all going to be okay.
What is the strangest health hack that you do?
The strangest health hack is probably colonics. It´s such a powerful way to clean your colon and not many people talk about it. Our immune system is 100% located in our colon and directly linked to our emotions. If you are bloated or full of toxins your body might not even be able to absorb all the nutrients from healthy foods, that´s why it´s so helpful to clean your colon regularly and to take probiotics. I go to KX in London for the colonic treatment and can highly recommend it.
What’s the biggest change you’ve seen/felt since adopting a plant based diet?
Being extremely balanced, calm and happy. I am rarely in a bad mood, sleep better and have clearer skin. I also love the fact that I never think about calories and always eat as much as I want without feeling bad about it.
