RED LENTIL SOUP

Hey Guys, finally it’s time for another recipe!!!:-) I have been eating a lot of cooked, warming food for dinner lately and wanted to share this super easy and delicious red lentil soup recipe with you. 🙂 It feels soooo good to come home after a long day and enjoy a warm bowl of lentil soup. This soup is easy to make and only needs a few inexpensive ingredients which makes it the perfect dish for anyone with a small budget. I love to make a huge pot so i have a healthy meal for another day.

INGREDIENTS

  • 400gr red lentils
  • 2-3 medium size potatoes
  • 2 medium size carrots
  • 1 red onion
  •  ground cumin
  • 400ml vegetable broth

STEPS

  • Cut the onion in small pieces.
  • Wash the lentils, place them into a pot, add the onion, 2-3 teaspoons of cumin and a hint of water. let it stir for a few minutes and then add 400ml  liter of organic vegetable broth. Add more broth if needed.
  • Peel the potatoes & carrots and cut them into 2cm pieces and add them to the soup.
  • let it cook for 40 minutes.
  • Place half of the soup into a blender and blend until smooth & creamy.
  • Add it back to the pod and the soup is ready to serve!! 🙂

Hei!:)
Das Rezept hört sich sehr gut an& die Bilder schauen toll aus!
Mir ist nur aufgefallen das du oben bei den Zutaten 400mL Gemüsebrühe& danach bei den Schritten 1L Gemüsebrühe geschrieben hast…
Man sieht ja meistens beim Kochen wie viel das ist, trotzdem glaub ich das dir da ein Fehler unterlaufen is 🙂

    Dankeschön:-) Wird dir bestimmt super schmecken 🙂 Ich meinte 400ml aber beim kochen kann es sein dass du noch etwas mehr dazu geben musst, das hängt auch immer ein bisschen von der Menge der anderen Zutaten ab. Danke dass du mich darauf aufmerksam gemacht hast :-)!

Das Rezept hört sich sehr gut an und die Bilder schauen auch total lecker aus.
Mich verwirrt nur das du bei den Zutaten 400mL Gemüsebrühe und bei den Schritten 1L Gemüsebrühe geschrieben hast.

Hi !
I’m only 18 y old and two years ago I started “making ” my diet “healthy” and that was the biggest mistake I’ve ever made. I cut of everything and had anorexia for 8 months, then I started to eat to much and gain 20 kilos ( in about 5 months) Now I have really lots of problem with my eatting routine, one day I eat normal then I hav attack and eat everything. I ‘m asking you for advice cause you have perfect body sooo what sould I do ? How hould I change my diet ?

    Hi Martha,
    the key to long term health is to have lifestyle where you don’t restrict yourself. The high carb vegan diet really is a lifestyle not a diet and will give you amazing results if you stick to it long term. My best advice is to go high carb vegan, eat mainly healthy carbs like ripe fruits, dates, potatoes, rice, veggies, etc./ drink tons of water/ exercise 3-4 times per week and most importantly stick to it LONG TERM. You are coming from a restrictive past and your body needs to trust you again. That may take some month and you may gain a few kilos but you will lose them so quickly afterwards and you won’t be in that cycle of restriction anymore. I highly recommend to try it as there is nothing more liberating than not thinking about portion sizes, calories etc. and instead enjoy every meal to the fullest.

      Thank you sooo much, today I had horrible day with my eating problems but I decided to start tomorrow high carb diet, I want to look better and feel better, I write to you what happened to my body after 1 month

I wonder :
1.did you get any problem with your childhood or teen years which changed your mindset and lifestyle?
2.how about your partner’s lifestyle? Pardon it’s not a question about you. I’m thinking about him who lives with a super sexy vegan like you. Does he eat and live like you?

    Hi Ara,
    thank you!:-)

    1. I never had childhood problems due to the way i ate. I always LOVED fruits and all things healthy, never drank alcohol and if people were not okay with that they were obviously not friends. 😀 Hope that answers your question.:)
    2. My boyfriend is not vegan, however, he loves healthy food as well and is having a smoothie, some fruits and veggies mostly every day. 🙂

Hi Caroline! First of all, I wanted to say you’re sooo amazing and inspiring! I learn so much from you all the time. I am also having a vegan lifestyle (well almost, sometimes I get cravings for yogurt and granola) 😉 but my everyday nutrition is pretty much same as yours! Expect I am eating less fruits but more healthy fats like olives, avocado and tahini (if you know what that is). I wanted to ask if there are risks in a high fat vegan diet? Will it prevent me from getting fitter and to show my abs more? I have a very slim body (kinda similar to yours) but I’m trying to get my abs to show 🙂

    Healthy fats like olives, avocados and tahini are amazing and super healthy for you, however, from my own experience I can tell that I got way more toned eating a low fat diet. (ca 3 avocados per week and some nuts here and there:)). Basically, the less stomach fat the easier it is to see abs.

    I use one from wholefoods that has very little sodium. 🙂 There are usually lots of organic & low sodium options!:)

Hello
I am wanting to get rid of the layer of fat on my stomach so my abs will show and was wondering how you would suggest to do this ?
I eat a vegan diet so should I eat mostly carbs and cut of nuts, avocado?
Also would you class whole grain bread as being a healthy carb?

    Hi Nicole

    Eating a raw diet (mostly fruits & dates & salads & green smoothies) will def help a lot! 🙂 If you do cook food i would stick to simple things as steamed potatoes (saltfree), steamed sweet potatoes and things like that. I love avocados but am not a big fan of nuts as they can be a bit hard to digest if you dont soak them.

    Also cardio helps a lot as you burn more fat and boost your metabolism. 🙂
