Now is the perfect time to get in summer mood and to enjoy lighter and healthier meals :-).
I love Zucchini Noodles as they are soooo yummy and so fun to make. There are so many great ways to prepare them using both cooked and raw sauces. This recipe is really simple and delicious but also amazingly healthy for you.
All you need is a spiralizer and a blender and you are ready to go!

INGREDIENTS (serves 2)
- 3-4 Zucchinis
- 1 avocado
- 2 Mangos
- 1 stalk of fresh rosemary
- 1 stalk of fresh dill
- 1 spring onion
- add a little water if needed
Spiralize the Zucchinis first and then put all the other ingredients into a blender to make the sauce. It only takes about 10-15 minutes to make which is perfect for anyone who doesn’t want to spend too much time cooking :). The combination of the sweet mango, the rich avocado and fresh rosemary & dill is so satisfying and delicious. I am sure you like this one as much as I do :-)!!!
