Vegan Chickpea, Lentil & Potato Dahl

Ever since going vegan, I have been a huge fan of Indian food. 🙂 Chickpeas, Lentils & Co are one of my favourite protein sources and make every vegetable dish more filling and satisfying. I have been enjoying this delicious recipe so much lately and am super excited to share it with you. The perfect comfort food after a long day! 🙂 It freezes well too, so you can make a double batch to have some delicious meals ready to go for busy days. It´s healthy, easy to make and great for everyone who´s eating on a budget. 🙂



  • 400gr Chickpeas (click here to see my favourite)
  • 6-7 potatoes (I love Charlotte potatoes)
  • 300gr red lentils
  • 1 head broccoli
  • 500ml vegetable broth (click here to see my favourite)
  • 2 garlic cloves, crushed
  • 2 teaspoon yellow curry spices (click here to see my favourite))
  • 2 teaspoon Ground Cumin
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon coconut sugar (optional)
  • 1 fresh lemon


  • Steamed Jasmin rice
  • thinly sized fresh cilantro
  • 200 gr Cherry Tomatoes, cut in half
  • thinly slized cucumber


  • Start by steaming/ boiling the potatoes for 25min
  • Add the broccoli 5 minutes before the potatoes are ready
  • Wash the lentils, add the garlic, spices  & coconut sugar and bring to boil with the vegetable broth
  • simmer down the heat and let it cook for 25 min until thick and creamy
  • add the chickpeas and broccoli and let it cook for another 10 minutes
  • Peel the potatoes and add them to the pot, mix it all well together
  • Serve with steamed Jasmin rice and top with fresh cilantro, cucumber and cherry tomatoes for that extra crunch 🙂


  • You can replace the vegetable broth with coconut milk to make it even creamier 🙂

Hi I love your blog ! Was wondering what your thoughts on oatmeal are? If you eat oats for breakfast and then fruit after that during the day, what impact would that have?

Mmmmm it must be delicious

I also have my own “perfect” vegetable stew recipe & I always prepare it, when the weather is not what I would like it to be 😉 It is called “leczo” (letscho) and consist of pepers, zucchini, onion, chickpeas and tomatoes. It is so fulling, so tasty and sooooo healthy.

I also got tye question to you Caroline: what do you think of adding herbs to the meals? I always try to add parsley or Schnittlauch (idk the English word 😉 to my avocado-dressing or tomatoes, but I do it more for the taste. Do the herbs have any special health benefits?? (My tipp: try to add to your avocado-dressing (besides lemon juice) parsley and peper, if you like it “hot”- it realy tasts soooooooo gooooood then ;))

You are also the one, who has shown me dates and honestly now I am addicted to them 🙂
I love you and your blog. It has been very imformative to me (thanks to you I always steam my potatoes one day before (starch), and next day the only thing I have to do is to prepare my salad :)) but also motivating.

Love your life videos, you are such an optimistic person. I wait for more recepies/photos/ and live streams (also the one in German )

Do you eat baked bean s? and if not why > i dont dunerstand how you say you have a balanced diet but that you eat mostly dates for winter? Also for some reason im just not tha active i eat a lot but can only run at most 6k on the treadmill but you can run 8k?

    Hi Hannah 🙂

    I never said I only eat dates during the winter :):) I love to eat lots of dates all year round because they are very high in nutrients (magnesium etc.), have a lot of fibre and satisfy sweet cravings. I am not the biggest fan of baked beans and prefer lentils & chickpeas. Beans are great, its just my personal preference :-). When it comes to running it really takes time for your body to get used to it. 6km is a great start and you don’t necessarily need to run more than that on a daily basis. My fitness has gotten soooo much better since I am vegan and Im positive it has a lot to do with eating mostly raw fruit during the day. Try it out:) Maybe it will do the same for you. Hope that helps!:)
